Descended from the wild Mediterranean cardoon, the Artichoke has been grown since antiquity in North Africa, where it holds pride of place in tagines and spring dishes.

A perennial, it produces for several years and is propagated by offsets taken at the base, allowing the planting to be renewed without sowing.
