Caroubier — detail

The tree of Mediterranean frugality

Naturally present throughout the Mediterranean basin, the Carob withstands extreme drought and poor soil where almost no other fruit tree survives.

Its pods are eaten as flour or syrup, and its remarkably uniform seed is said to have given its name to the jeweller's carat.

"The carob gives shade where nothing else will grow."
