Blette — detail

The beetroot's forgotten sister

Chard and beetroot are the same botanical species: one was selected for its leaves and stalks, the other for its swollen root.

The leaf form is the older one: Greeks and Romans already grew it, long before the root took on the importance it has today.

"Same plant as beetroot, different part eaten."
01

Styling Tip 01

Cut and it regrows

Take the outer leaves at the base: the heart keeps producing all summer and often until frost.

02

Styling Tip 02

Clustered seed

Each "seed" is really a cluster holding several embryos: thin to one plant every thirty centimetres.

03

Styling Tip 03

Heat tolerant

Unlike spinach it doesn't bolt at the first hot spell: it is the leaf crop of dry summers.
